Week in Review #4
Hello friend and happy Friday!
I FINALLY remembered to take some pics of life lately, so I could share it with you!
I've been out of town the past couple weekends and had such an incredible time. A couple weekends ago we went to North Carolina for a wedding...
And then last weekend we had our annual Memorial day weekend trip to St Augustine. This was our 7th year in a row going! To say I'm obsessed with these people is an understatement. Such amazing people. Plus watching 30 year olds make a pyramid is the most hilarious thing ever haha.
Alright and for some fun eats from this week!
Note: This is most definitely not everything I ate and does not include bites, snacks, etc. Just always want to keep that in mind!
The first night Nick and I were back in town I made pesto salmon with purple sweet potatoes and butter, and roasted broccoli with parmesan. Actually a super simple meal to make and the pesto was part of my food prep for our lunches so I figured why not add it to the meal! Such a good decision.
Still using all the Sunbasket deliveries for dinner, its been a life savor lately. A bit more pricey than what I typically make on my own, but honestly worth it to save me the time coming up with ideas for meals to eat!
This week I made Sunbasket fish tacos with lime yogurt and pork and greens with a blueberry apricot glaze. I've got a third meal I am saving for this weekend too!
Lunches this week were a random concoction of some type of protein (eggs or rotisserie chicken), roasted potatoes, tomatoes with a balsamic glaze, pesto and spinach smothered in Primal Kitchens Italian dressing :)
Not a ton of house updates since we haven't been home much to do much of anything...but I did get a new rug in for the office that I ordered a couple months ago! OH and I had a local macrame-badass-artist make this amazing macrame for the office too!
Plus this pic of my sleepy pup is just the cutest :)
